Black-Bean Quesadillas with Goat Cheese

An old Cooking Light standby, and one of my favorite weeknight dinners. It can be ready in less than fifteen minutes, and the recipe is forgiving. For instance, last night I forgot the cumin, and only had 2 oz. of cheese. No big deal.
